My take on Huevos Rancheros
I started out with another tortilla cutout (like on the quesadilla burger), sprayed a Pyrex bowl, and put the tortilla in the bowl. I used the bowl that was used to cut out the shape of the tortilla. This way it just has a slight raised edge after being baked. Then I add refried beans, Fire sauce from Taco Bell (you can use a sauce made from canned tomato sauce and a good amount of cumin to get a nicely flavored sauce without the heat), salsa, and cheese.
While that’s in the oven, I poach an egg (I’ve noticed most Huevos Rancheros recipes use a fried or baked egg. I personally prefer poached because the whites are fluffy and you still get a runny yolk without having that nasty butter crisp on the whites).
The easiest way to poach an egg is to put about half a cup of white vinegar in the water. The vinegar helps the egg white stay together. Then just stir gently around the edges of the pot and let it boil until the white is firm.
After all of this was done, I put the egg on the baked tortilla (and its friends) and threw some chopped green onion and my chili con queso on there with a tiny bit of seasoned salt and ground black pepper.
Obviously those toppings are optional. I’ve heard this meal is delicious with black olives and lettuce, and I’ve also had it with chopped tomatoes on top.

A half quesadilla burger with chili con queso potatoes. <3
For the chili con queso I just took some velveeta, salsa, chili powder and milk, and mixed them to a desirable consistency and flavor.
The potatoes are just leftover wedge fries (I adore bringing life back to leftovers), cut into half inch segments, seasoned with pepper and chili powder, and baked in the oven at 350 until they’re crispy again.
We only have burrito sized tortillas in my house, so I cut a circle out of one (about the size of the burger) and cut that in half. For the burger itself, I just took an already cooked burger (cut in half of course), put that on one of the tortilla “buns”, then threw some cheese on the other one and tossed those in the oven until the cheese had those wonderful brown spots on top.
This is a great way to bring a leftover burger back, because we all know that sometimes the bun doesn’t stay as good in the fridge and I actually prefer tortillas as my bread for almost everything.

Hey everyone. I’ve decided (since I love cooking so much) that I’d try to make you all hungry.
This first dish I made I call Pizza Lasagna.
The layers are Noodles, red sauce (homemade, you can use a pizza sauce or a spaghetti sauce), alfredo sauce (optional, also homemade), turkey cut into cubes, Pepperoni, more red sauce, and lots of cheese.
I baked it until the top of the cheese had brown spots (because they’re awesome) and chopped up a tomato in nice small cubes and threw those on top.
